Just had a quick listen to a live version of Godfather theme. Sounds to me like he’s using a mix of C# natural minor, minor pentatonic and harmonic minor.
Most of the time it’s natural minor with a few minor pentatonic licks thrown in. Over the G#7 chord, the harmonic minor works well.
That’s on a quick listen, haven’t listened to all of it but I would say it’s mostly that.
