If someone is playing in the key of G what will I notes will I play on bass.

I’m not much of a bass player but generally on the bass you want to keep things relatively simple. Playing the root and fifth of each chord is a good start with perhaps a few walking bass runs over the changes.
It would also depend on the style of music. You could try messing around with the G major scale if the key is major.
Worth checking out some Youtube videos for basic bass runs.
