They work pretty much the same. You just need to let your ear guide you. The main difference will be the v-I cadence has a weaker pull back to the root chord therefore you will often find the V7 chord is sometimes substituted for the v. This creates more tension and resolves stronger. For instance, i-iv-v in the key of Am would be Am / Dm / Em but you’ll often see E7 played instead of Em.
