Why are chords representing G flat 13(11) shown as legitimate chords without including the 3rd?

Hi. Could you point me to where? I’ve had a look but can’t see any diagrams without the 3rd so maybe I’m missing something.
Bear in mind that large chords aren’t always possible to play on a guitar so sometimes notes will be omitted – although in this case I can’t find any without the 3rd, on this site anyway.
