This may be a silly question but why is that Blues scales skip notes? I expect it’s because they add them but I still can’t get my head round for example, no B or F in the A scale.

I don’t know the history of the blues scale but it probably come about by just getting used by the early players who thought it sounded good, they skipped and added notes to suit the music. Composers years ago would adapt scales to suit certain circumstances which eventually become commonly used – probably the most obvious would be the minor scales which is explained here ..

Incidentally, the blues scale has six notes so I guess you are talking about the pentatonic scale?
