So I have noticed when you listen to alot of songs – In this case “I don’t want to miss a thing”, the notes you play in these beginner books sound like they replace the vocal melody so you can distinctly tell what song it is. However If you listen to the full song with lyrics you don’t always hear these notes being played, the voice of the singer takes makes the melody without these same notes in the background. Why is this? Is it because it is a beginner book making it sound like the song?

I’m not completely sure what you mean. Most sheet music and song books will have the main melody notated. It’s not always accurate. Could be for many reasons, maybe that’s how it was originally written and the singer is just adding their own phrasing. Sometimes it’s just laziness of the transcriber, sometimes it’s because of copyright issues or purposely made simple so that beginners and intermediates can play it.
